One of my favorite soups to make. I do a big batch and keep in the refrigerator to eat on all week!
1 # lean meat (round steak, sirloin, rib, whatever)
2 onions (large dice)
3 stalks celery, diced
1/2 tsp ground pepper
1 # carrots , sliced
2 cloves garlic, finely chopped
3 TBS Beef Broth Paste ( I use the schilling that you can get at Costco in the spice section. It is a paste and the first ingredient is beef, not salt!)
2 Quarts Water
3 TBS Worcestershire Sauce
1/3 C Red Wine (optional, but really adds flavor!)
2 Cans (14 oz ea) Tomatoes, stewed or diced
1 Can (14 oz) Tomato Sauce
4 oz Pasta, uncooked ( I like to use broken spaghetti but any pasta will do)
Dice the meat into small pieces , 1/2" or so (please don't get the ruler out!)
Saute meat for about 5 minutes. Add onions, celery, pepper and garlic. Let simmer about 1 hour. Add all the other ingredients. Let simmer together about 20 minutes, then taste. Add salt if needed or more beef paste.
Serve when pasta is cooked though. YUM
